Cinnamon Blueberry Baked Oatmeal





I know it may sound boring, but when it comes to everyday breakfast, oatmeal is probably my favorite. I wake up craving oats. Whether it is in my homemade granola bars (here), my homemade granola (here), a big bowl of steel cut oats (here), or now in this new delicious baked oatmeal discovery, oats and I are good friends. I had been seeing a few recipes pop up here and there for baked oatmeal and it caught my attention! After reading a few recipes I got the hang of what was needed to create these baked beauties, so I took a whirl at it, and I must say this is now going on my list of favorite breakfasts containing oats! There is just something about the hearty texture of the oatmeal, little bit of crunch from the flax seeds, and the hot blueberries that burst when you bite down that makes this dish such a wonderful way to start off the day. Not to mention it makes your house smell amazing!

These are sugar free, dairy free, vegan (of course), and gluten free (because I used gluten free rolled oats, from Trader Joe's). This makes a healthy bowl to get you going in the morning with rolled oats, flax seeds, almond milk, and fresh blueberries filling it with fiber, vitamins, minerals, and antioxidants.
So eat up and savor every blueberry bursting bite!

This recipe makes enough for two servings. Use half the ingredients to make a single serving, or double if looking to bake in a 8x8 dish.

Ingredients
1 cup rolled oats (GF or regular)
1 teaspoon cinnamon
Pinch of salt
3/4 teaspoon baking powder
2 teaspoons whole flax seeds
1 cup unsweetened vanilla almond milk
1 teaspoon vanilla extract
1/4 cup unsweetened apple sauce
1/2 cup fresh organic blueberries 

Preheat your oven to 350 degrees, and lightly coat your chosen baking dish/dishes with coconut oil.

In a mixing bowl, combine all the dry ingredients and mix well. Then add your wet ingredients, adding the blueberries last, and mix until fully incorporated. Spoon into ramekins (or baking dish if doubling recipe) and bake in the oven for 30 minutes, or until lightly browned on top. Let cool for 5 or 10 minutes (depending on how long you can wait!) and then dig in! Happy morning.

  1. What an amazing recipe. I am a total oatmeal girl, so I get it when you say you wake up craving oats. It is my motivation to get my butt out of bed on cold early mornings. A bowl of oats gives such a positive start. And I wanted to try baking them for a while now - with your simple recipe I finally might try it tomorrow ;)
