Cinnamon Berry Oats with Chia Seeds
One of my favorite breakfasts to make when I wake up in a particularly patient mood is a bowl of steel cut oats. This one is great because it is sugar free (minus natural fruit sugars) and is a great source of fiber, omega-3 fatty acids, and antioxidants! Not to mention it looks pretty. It also makes for a good second breakfast. Yes, I eat two breakfasts every day. Oats are wonderful cause you can dress them up in so many ways, here is one of my favorite variations.
Ingredients (Single Serving)
1/4 cup steel cut oats
1 cup water
1 teaspoon cinnamon
1 teaspoon chia seeds
1/4 cup blueberries (I like adding mine frozen, but not necessary)
1/4 cup raspberries
1/2 cup vanilla almond milk
Cook steel cut oats on the stovetop according to the package's directions. When they are done, stir in the cinnamon, chia seeds, and blueberries. Scoop into your serving bowl, and top with fresh raspberries and almond milk! The fruit gives it the perfect amount of sweetness without adding any sugar. Here's to a delicious and healthy start to the day.
