Raw Cinnamon Chocolate Truffles




These rich and dense raw truffles will surely nip those chocolate cravings in just one bite. There is something about cinnamon and chocolate that I feel blends magically together. To think you can create something as decadent as this with only raw, all natural, healthy ingredients just blows my mind. Not only are they vegan, but they are gluten free, soy free, and processed sugar free. They are packed with healthy fats, protein, vitamins, minerals, and antioxidants. Yet, you feel as if you are giving into a rare treat when you eat them - ah I can get use to this, enjoy! 

Ingredients
1 cup raw almonds
1 cup raw cashews
1/4 cup raw cacao powder
1 teaspoon cinnamon
1 teaspoon vanilla
3/4 cup dates, pitted and chopped
2 tablespoons raw agave nectar
2-3 tablespoons water
Extra cinnamon for dusting

Begin by pulsing the nuts in your food processor until they resemble a coarse meal. Then add the raw cacao and blend some more. Now add the rest of the ingredients, minus the water, and blend thoroughly. Lastly, add the water one tablespoon at a time until your truffle dough turns into a sticky ball whirling around your processor bowl. Spoon rounded tablespoons onto a plate and freeze for 10 minutes (about as long as it will take you to clean the food processor and put everything away). After freezing they should be less sticky. Roll each truffle in your hands to create smooth little truffles balls. Freeze for another 10-15 minutes, or until firm, dust with cinnamon, and keep in an airtight container in your refrigerator until ready to eat!
